Yummy

We have had a week full of wonderful meals.  I told you about how blessed we were with help this week while I'm on restricted duty and man, are we eating well!

Saturday, the day of the transfer, we picked up some lunch to-go at Chipotle and just winged supper.
Sunday was kind of funny - we really just snacked all day until dinner time.  My friend, D, brought us this fabulous lasagna and garlic bread for the boys and some super garlic broccoli for me.  I ate all the broccoli in one sitting as my meal it was sooo good!  Hubby has been eating the lasagna every day (it was a nice, big pan).
Monday, a friend, M, picked up some Thai food to bring for dinner.  Chicken Satay and Green Curry.  Yummm.  And leftovers for lunch the next day.
Tuesday, friend J brought scrumptious Mediterranean pasta: brown rice pasta (GF!) with chicken, fresh tomatoes out of her garden, olives, basil & feta.  Again, enough for leftovers.  And what a great idea!  I'm definitely keeping this one is my food idea bank.
Wednesday, another friend J brought some nice veggies & rice.  My description does not do this dish justice (I'll never be a food writer, I guess).  It was simple & perfect.  My husband raved about it.  littleA scarfed it.  Steamed veggies, steamed rice, avocado & grape tomatoes tossed in olive oil, salt & pepper (she was so sweet to be careful of anything gluten).  It was a large amount & we didn't have many leftovers. Delish!
Thursday we went out to lunch at Chili's after littleA's swim lesson (my one outing with hubby along to do the heavy lifting.  heavy lifting = littleA) and that evening friend L brought chicken cacciatore for dinner.  Oh my!

Not only has the load been lightened by not having to cook; not having to do dishes means the kitchen is clean.  Wow.  And, I got so many new ideas for easy weekday meals.  The ideas enough are worth their weight in gold ... not to mention how extremely touched we all are.  We have a fridge full of leftovers to last us through Friday and the weekend and since we've had so many good homemade meals, a little take-out if needed won't be seem bad at all if needed.  My stockpile of frozen Amy's dinners are still in the freezer awaiting another day and we all have full tummies.  Definitely more than grapefruit & coffee!
